The Classic Local Dishes

Before choosing a restaurant, know what to order:

Pici all'aglione — the signature local pasta. Thick, handmade spaghetti (no eggs, just flour and water) with a sauce of Valdichiana garlic, tomatoes and olive oil. Simple, extraordinary.

Pici al ragù di cinghiale — the same pasta with wild boar ragù. Deeply savory, intensely local.

Bistecca di Chianina — the great Tuscan steak, from the local Chianina breed. Order it al sangue (rare) — anything else is a waste of the best beef in Italy.

Ribollita — the Tuscan bread and vegetable soup, better the second day (hence the name: "re-boiled").

Where to Eat

For traditional Tuscan cuisine: Ristorante Diva e Maceo — reliable, well-priced, excellent pici and a decent Vino Nobile list. Unpretentious and genuinely local in feel.

For the market experience: The Saturday morning outdoor market, outside the town walls. Buy your lunch from the producers directly — pecorino, salumi, bread, seasonal fruit — and eat it on a bench with a panoramic view.

For the quintessential Tuscan experience: Caffè Poliziano — the historic literary café from 1868, with its Art Nouveau interior and panoramic terrace. For breakfast and aperitivo, not dinner.
